Identification of Nutraceuticals and Antioxidant Activity in Low-Cost Broken Rice Varieties

Rice grains are the main crops consumed by more than half of world’s population. White rice contains carbohydrates, while pigmented varieties nutritious, with bioactive compounds that can potentially prevent pro-inflammatory diseases like diabetes and hypertension. Broken is produced in large quantities as a cheap by-product milling; however, its nutraceutical contents have not been identified. Therefore, research aimed to examine four low-cost broken varieties’ color values compound contents. Kiaw-Ngu glutinous (white rice) brown Jasmine 105 were used control, Riceberry Sangyod represented varieties. Color analyzed using RHS chart CIE L*a*b* space system. Antioxidant activity was measured DPPH assay, total phenolic determined Folin–Ciocalteu’s method. Water-soluble vitamins (B1, 2, 6) fat-soluble (E -carotene) HPLC. The results illustrated had most potent antioxidant (83.45%), followed rice, 105, respectively. Similarly, contained highest level acid (236.98 mg gallic equivalent (GAE)/g).
